I made similar changes - whole wheat spaghetti, lowfat cottage cheese, half the butter, and 12 oz. of soy crumbles instead of beef. My son, who had complained about this the entire time it was cooking, scarfed it down. I made it last night BUT I lightened it up a bit and it was still scrumptious! I used whole wheat spagetti noodels, fat free cottage cheese, low fat mozzerella cheese, ground sirloin (93% beef, and no butter. YUM. Even my inlaws scarfed it down. Wowee!!!
