A Healthier Meatloaf

So, I've continued on this path to healthier eating. We're hooked on pastured eggs, organic fruits and vegetables, and now we're working on finding the best meat solutions.

The latest thing I've experimented with is grass fed, pastured beef.  This is a meatloaf I made with it.  I snuck a ton of vegies in it (of course you could add more). It was really good!


Ingredients in my meatloaf:
1 10 ounce package of grass fed beef
1 large green pepper, chopped well
2 portobello mushroom caps, chopped well
1/2 vidalla onion, chopped well
1/2 cup panko bread crumbs
1 egg (those pastured ones are really good!)
6 slices provolone cheese
thinly sliced ham
ketchup (1/4 cup for the meatloaf and 2 tbsp. for the topping)
worscesteshire sauce (a couple of dashes)
brown sugar (2 tablespoons)
apple cider vinegar (1 tablespoon)

Directions: Mix the first 6 ingredients well.  Add 1/4 cup of ketchup and worcestshire sauce.  Mix together and form into a rectangle on a piece of saran wrap. The rectangle should be about 1/2 inch thick.


Add provolone cheese to the top of the rectangle.

 Add ham on top of the provolone cheese.
 Use the saran wrap to lift the meat up and begin making a roll from it.

 Finish rolling it and put it in a loaf pan.

Mix the remaining 2 tbsp. of ketchp, brown sugar, and apple cider vinegar. Using a spoon, spoon it on top of the meatloaf. Bake it in a 350 degree oven for approx. 45-50 mins. Slice and serve. Steamed broccoli and sliced strawberries are wonderful sides!
