Preheat oven to 350 degrees. Spray a 9 by 13 dish with nonstick spray. Mix 1 cup sugar with 2 tablespoons cinnamon. Take 1/3 cup of this mixture and sprinkle it along the bottom and sides of the dish.
In a mixing bowl, beat 1 yellow pudding cake mix, 1/4 cup oil, 3 eggs and 2 cups applesauce. Pour this mixture in your sugared dish. Sprinkle remaining sugar mixture over the top of the cake mixture.
Using a fork or knife, swirl the sugar mixture into the cake batter.
Bake the cake for 50 to 60 minutes at 350 degrees.
When cake has completely cooled, sprinkle with powdered sugar.
Applesauce Cake
- 1 box yellow pudding cake mix (or use yellow cake mix and add 1 small package vanilla instant pudding)
- 1/4 cup vegetable oil
- 3 eggs
- 2 cups applesauce (I used cinnamon applesauce)
Sugar mixture
- 1 cup sugar
- 2 tablespoons cinnamon
Spray a 9 by 13 dish with nonstick spray. Sprinkle the dish with 1/3 cup of the sugar-cinnamon mixture. Beat cake mix, eggs, oil and applesauce for about 2 minutes. Pour cake batter into sugared dish. Sprinkle remaining sugar mixture on top of cake batter. Swirl through cake with fork or knife. Bake the cake for 50 to 60 minutes at 350 degrees. Best made the day before serving. No icing required. Sprinkle with confectioner's sugar or serve plain.
