I have one of my favorite recipes to share with you today. My Mom has been making Hot Slaw for years and it is always a must have at Easter. Now, if you are watching your waistline this isn't the recipe for you. I guess it is somewhat healthy, cabbage is healthy, right? Some of my friends who like to eat healthier gobble this up, so don't be afraid. Splurge on some good yummy food occasionally.
I made this the other day as I had a head of cabbage that I needed to use up and this is by far my favorite use of cabbage. You can buy a bag of pre-sliced cabbage if you prefer, or you can thinly slice a head of cabbage. I had a very small head of cabbage and it filled my bowl.
While you are slicing the cabbage, I suggest cooking your bacon. You can cook your bacon in a pan or in the microwave. I wouldn't suggest cooking it in the oven as it is hard to reserve the bacon grease (see I told you this wasn't healthy). I have a great bacon dish for the microwave that I use (see picture below). It takes a minute per slice plus about a minute or two to get the bacon nice and crispy.
Once you have your bacon cooked, pour remaining bacon grease into a measuring cup. Mix sugar, vinegar, and bacon grease. If it is hard to melt the sugar you can warm up the mixture again. You want it to be warm when you pour it on your slaw. If microwaving it takes some of the taste away, you can add a bit more vinegar or sugar as needed. You can also add a small amount of water if you need to thin out the dressing. This will taste similar to a sweet and sour dressing.
Crumble up your bacon and place on top of the slaw. Then pour the warm dressing onto your slaw and bacon. Stir the hot slaw to fully incorporate. Serve immediately.
