The other day I had a dilemma, what to make for dinner? I had cut up some chicken the other night and I thought I would marinate it in some Italian dressing. Well the next day came and I was still unsure of what to make. Then I got creative. Sometimes creativity in cooking works and other times it bombs. Thankfully, this time it was a success. I have included the easy recipe for you!
Creamy Italian Chicken & Pasta
2-3 large chicken breasts cut up in small pieces
Italian salad dressing for marinade (not the packet kind)
Mixed vegetables -either fresh or frozen (I used half a bag of stir-fry veggies)
1 (8 ounce) package of cream cheese, cut into smaller pieces
6 to 8 ounces of spaghetti or noodle of choice, cook according to package
Place uncooked chicken in a large ziploc bag and cover with Italian dressing. Allow it to marinate for at least an hour, preferably overnight for added flavor.
Pour entire contents of bag into a large saucepan. Cook chicken and then add vegetables. Once both chicken and vegetables are cooked, add in the cream cheese and stir. Then add in cooked spaghetti and stir.
Simple, easy and delicious!
