I want to share with you one of my favorite recipes. I have made these for years, but the recipe was passed down to me by a great cook and friend Beth Wright. She always has the best recipes and this one is a fantastic one!
My husband and kids eat these like they are candy. This is a recipe that is good for breakfast, lunch, dinner or dessert. You can put these in a container and wrap them with a ribbon as a teacher, neighbor or housewarming gift.
Chocolate Chip Banana Mini Muffins
1/2 cup butter
3/4 cup sugar
2 eggs
1 teaspoon vanilla
1 cup smashed banana
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mini chocolate chips
Using a mixer, cream the butter, sugar, eggs and vanilla together. Mix in the bananas. In a separate bowl, combine flour, baking soda, and salt. Gradually add in the flour to the creamed mixture. Once all is incorporated, stir in the mini chocolate chips. Using a small scoop, put batter in a mini muffin tin or using a larger scoop place in a regular muffin tin. Bake at 350 for 11 minutes for mini muffins or at least 20 minutes for larger muffins.
