This is my oldest daughter's idea of a great breakfast!
Her favorite part is the omelette. It's so simple. She makes it herself.
1 egg (cage free)
2 mini red and orange peppers sliced
a sprinkle of Cheddar Cheese
We spray the bottom of the pan with Olive Oil spray. Then, we slice the peppers thinly. We let them sizzle for a couple of minutes to soften them up. We scramble the egg in a container and pour it on top of the peppers. After the egg is cooked, we sprinkle the cheddar cheese on top.
This omelette is high in protein and vitamin C (thanks to the peppers). We add a fruit (apples in this case) and a slice of toast, English muffin, or side of oatmeal and GraciAnn has a breakfast that starts her day wonderfully. The added bonus is with minimal help, she can make it (she's 4!).
Our family is getting this healthy breakfast thing under control!
