Banana, Pineapple, Coconut, Whole Wheat Muffins
Once again, I had a challenge. My daughter's Assistant Teacher's birthday was less than a week after my daughter's birthday. I had to come up with another healthy treat to celebrate her birthday. I came up with a delicious recipe! It was made with no added sugar too! Here's the recipe I created:
Banana, Pineapple, Coconut, Whole Wheat Muffins
1 20 ounce can unsweetened crushed pineapple drained (save the juice)
1/2 cup butter
2 eggs
4 bananas
1/3 cup pineapple juice
1 tablespoon honey
1 2/3 cup whole wheat flour
1 cup coconut
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
Heat oven to 350 degrees. Spray mini muffin pans with nonstick cooking spray. I used Pam. Mix first 6 ingredients in a bowl. Combine the last five ingredients in a separate bowl. Slowly mix the dry ingredients with the wet ingredients. When the ingredients are well combined, fill muffin cups 2/3 full. Bake for approx. 22 mins. Let cool and remove from pan. Yield: 3 dozen mini muffins.
